This is a special shoyu product from Daitoku, a Shoyu Brewer local to the Kansai region of Japan. This shoyu combines the wonderful flavors of Japanese soy sauce and dashi together, to bring a uniquely umami-packed seasoning.
Made with rare organic soybeans and wheat cultivated by contracted farmers in Hokkaido, domestic and organic aged soy sauce is infused with dried katsubushi bonito flakes in order to make this dashi shoyu.
In order to enhance the flavor of this dashi shoyu, organic brewers mirin and organic sugar have been added. It contains no chemical seasonings, preservatives or extracts.
Daitoku is a Shoyu Brewery located in Yabu City Hyogo Prefecture that strongly believes in using local ingredients and traditional brewing methods. All of shoyu-based products are made of naturally brewed soy sauce made with domestically sourced soybeans, wheat, and salt.
Without diluting, you can recreate ohitashi (Japanese boiled green vegetables eaten with soy sauce and dashi).
For making simmered dishes, use this dashi shoyu in place of regular shoyu for a more savory flavor.
Use this dashi shoyu in soups, stews, stir fries, and more, the same way that you would use regular shoyu.
