The nakiri knife is a traditional Japanese knife developed around the Edo period. It’s a single-purpose knife, only for cutting vegetables, so it’s often called a Japanese vegetable knife. The Kurenai's blade is made from extra sharp molybdenum vanadium steel, sandwiched between high-chrome stainless steel, leaving only the cutting edge exposed.
