These Matcha Green Tea Soba Noodles are the result of a collaboration of a Japanese soba factory with more than 120 years of history and the renowned tea master Mr. Sasaki. The result of this collaboration is a tasty, aromatic and bright green tea soba noodles with the best balance of green tea matcha and soba flour.
The soba (buckwheat flour) is made in Tokakushi, Nagano, renowned area in Japan for its high quality soba.
The matcha is also a high quality one; Tenryu Matcha from Shizuoka which is known as the "tea prefecture."
Finally, pure natural water coming from melted snow from Mount Zao is added to make these Japanese soba noodles.
Put the noodles into a large pot with boiling water. Make sure all noodles go under water. Boil for approximately 5 minutes and stir the noodles softly.
Prepare a big bowl of cold water, and transfer the boiled noodles into this cold water. Soak them for 10~20 seconds, then stick your hands into the cold water and gently rub them.
Drain the water well and transfer the noodles to the dish. You can dry it softly with a few paper towels if the noodles are still soaking-wet.
Enjoy your soba with cold or warm tsuyu sauce.
