Hichifuku Jyozo is a shiro shoyu (white soy sauce) and shiro dashi producer based in Aichi Prefecture in Western Japan that specializes in producing organic white soy sauce and shirodashi. They are the only certified organic JAS-certified shiro shoyu maker in Japan that uses organic wheat and organic soybeans as the main ingredients in their shiro shoyu.

Shiro shoyu, or white soy sauce is one of the main types of shoyu in Japan. It is characterized by its light amber-like color and high ratio of wheat to soybeans. It is a shoyu that is local to Aichi prefecture, and is commonly used to season soups or dishes where preserving the original color is important.

As white soy sauce belongs to the soy sauce category, a white soy sauce that does not contain any soybeans cannot be classified as a true soy sauce. Therefore, producing an authentic shiro shoyu that actually contains soybeans is no easy task.
