To produce this dark-roasted sesame oil, Horiuchi has taken select golden sesame seeds and - rather than following the traditional method of roasting them with a high heat to immediately bring out the aroma - they've slowly roasted to the core of the seeds slowly, and then lightly roasting the surface of the seeds, in a two-step process that brings out not only the aroma, but also the original umami of sesame.
This extra-fragrant sesame oil tastes just like eating freshly ground sesame seeds, and is perfect for using as a seasoning, or combining with salt, soy sauce, and vinegar to make a simple dressing that elevated meat, salad, sashimi, tofu, and vegetables alike.
