Ichidagaki is a Japanese Geographical Indication for only superior quality Japanese dried persimmons.
The Ichidagaki is sweeter than other varieties of persimmon. It has a light brown color and a soft, chewy flesh. In addition to the qualities of Ichida persimmon, proper drying and kneading techniques are also important to make these premium Japanese dried persimmons.
Ichida persimmons are cultivated only in the south area of Nagano Prefecture, a region where the cultivation of kakis has continued for more than 500 years.

I saw an email from Japanese Taste showcasing the dried persimmons and had to order them. I got a box for our house and a few others for family and friends. They are so darn delicious and you can tell how much care goes into producing these treats. I will be ordering more boxes the next time they are available.

Don’t let the price hold you back. These naturally dried persimmons are sweet with soft moist centers & excellent fruit flavor, and are as good as being in Japan. A 700 gm box has a piece count of 19 or 20 hoshigaski and store well in a ziplock bag. Do not refrigerate. Most have seeds (2 to 8) but that’s expected with a dried whole fruit & don’t affect the eating pleasure. In 2023 we bought 1 box, this season we bought 3, to share with others. We’ll buy again…
