Ito Shoten is a long-established miso producer that has been making quality soy-based products like tamari shoyu since the Edo period. Located in Taketoyo town, Aichi prefecture, Ito Shoten has focused on creating the highest quality miso and tamari shoyu for the past 6 generations.
Ito Shoten uses only specially selected domestic whole soybeans, high-quality sun-dried salt, and a fermenting agent known as koji, which are combined together in a cedar barrel for three years to create their miso, as well as this tamari shoyu.
The long brewing and aging process required to create this tamari shoyu results in a deep and rich flavor, stronger than a typical soy sauce. Interestingly, it is less salty than typical soy sauce, resulting in a perfectly-balanced product that is rich and flavorful.

Note: this tamari shoyu is less salty than conventional shoyu, but it is still deep in flavor. Because tamari has a stronger flavor than other soy sauces, start with half the amount you would use if you were using a regular soy sauce, and adjust the taste by adding small amounts at a time.
