Kajino Nihachi Soba Noodles are a premium Japanese buckwheat noodles made with domestic ingredients.
"Nihachi" literally translates as 20% and 80% and refers to soba noodles with a buckwheat to wheat flour ratio of 8:2. By adding wheat flour, the texture of the noodles becomes smoother compared to 100% buckwheat noodles.
To make these premium Japanese soba noodles only buckwheat flour, wheat flour, and salt are used. No additives, preservatives, and any other artificial materials are added.
Put the soba noodles into a large pot with boiling water. Make sure all noodles go under water.
Boil for approximately 5 minutes and stir the noodles softly.
Prepare a big bowl of cold water, and transfer the boiled noodles into this cold water. Soak them for 10~20 seconds, then stick your hands into the cold water and gently rub them.
Drain the water well and transfer the noodles to the dish. You can dry it softly with a few paper towels if the noodles are still soaking-wet.
