Sujihiki knife, which is literally translated as “grain slicer”, is a Japanese carving knife. Its long and thin blade makes it perfect for removing tendons from gristly meat. If you often need to cut and slice a chunk of meat, this is the one for you.
The blade is made with stainless steel called FC61, and it is processed through the manufacturer’s original quenching called FRIODUR®. This technology significantly increases the blade’s hardness and lifespan.
You can also use this product as a sashimi knife; just like the meat, cut the fish across its tendons. The knife’s asymmetrical handle also supports precise cutting.
