This food is called nametake (pronunciation: /nʌmetʌke/), a Japanese cuisine made from an enokitake mushroom cooked with soy sauce. It is one of the widely consumed Japanese delicacies eaten straight or used as a seasoning.
Uses enoki harvested at Nagano Prefecture, the major production cites of mushrooms in Japan, and simmered with salty-sweet soy sauce.
This cooked enoki is also seasoned with umami based on kombu and seafoods. Despite its rich taste, it is 30% less salty than that of the average nametakes.
Free of chemical additives. Solid content (the amount of mushroom among the whole net weight) accounts for 80%.
Granted Grand Gold Award (for three consecutive years between 2007 and 2009) by the Monde Selection, an international quality testing institution.
You can eat as it is. Can also used as a seasoning for salad, pasta, soup, marinated dishes, and more.
