Place oyster top-side-down on a towel on a firm work surface. Take some of the towel in your hand to protect it, and press down on the oyster to firmly hold it against the table.
Insert the tip of oyster shucking knife into the hinge of the shell and find some leverage. Wiggle the knife around until you have inserted it deep enough to put pressure on the top of the shell. Move the oyster shucker up and down, while gently twisting and rotating until the top shell pops.
Rotate the knife further to take the shells apart completely, then clean your knife and cut the muscle attaching the shells together. Finally, slide your oyster knife under the oyster flesh, separating it from the bottom shell.
