This yuzu sansho condiment is made by Tajima Jozo, a vinegar brewery located in northern Hyogo prefecture in an area called Tajima. Tajima prides themselves on using domestic and locally sourced organic ingredients when possible and sticking to the most traditional methods even though they require much more time.

Using locally harvested Tendaki Yuzu and Asakura Sansho pepper, kneading them together until aromatic and the perfect texture, and then blending with their own naturally brewed Japanese vinegar, Tajima has created an exceptionally refreshing yuzu sansho. This is the perfect condiment or seasoning for many kinds of dishes, including but not limited to miso soup, sashimi, noodles, and nabe hotpots.

Add a little yuzu sansho to your miso soup or nabe hotpot just after cooking and stir it through, use as a condiment on sashimi the same way you would use wasabi, blend with dressings, marinades, and sauces to add a citrusy, vinegary kick of spice.
