This is a gluten-free and soy-free Japanese sauce made with 100% broad beans (also known as fava beans) and salt from Shodoshima. A great alternative for those who cannot eat regular soy sauce made of soybeans and wheat.
Its flavor is closest to the most popular type of soy sauce, Koikuchi, which accounts for approximately 82% of all the soy sauce consumed in Japan. When a blind tasting test was conducted, the tastes were indistinguishable.
Unlike normal soy sauces, this fava bean shoyu is free of soybean and wheat, so it is perfect for people with allergies but who still want the “soy sauce taste”.
The fact that it is made only with fava beans and salt makes it an ideal seasoning for those who are vegan, gluten intolerant, or have other dietary restrictions.
