The Hakubishi Hon Mirin is an authentic Japanese mirin sauce handcrafted following traditional methods and using the single ingredients of glutinous rice, rice malt, and shochu.
Unlike aji mirin which contains sweeteners and other additives this hon mirin is made by fermenting a combination of the three previously mentioned ingredients; steamed mochi rice, koji (rice malt) and shochu (rice liquor) for 60 days.
During this period, the starch in the rice is broken down, creating natural sugars and amino acids, yielding mirin’s distinctive tangy-sweet flavor.
This hon mirin has a genuine taste and natural sweetness than cannot be found in chemically aged mirin products. In fact, this mirin has such a pure rice flavor that it can also be enjoyed as a beverage if you wish.
Use this hon mirin when making simmered dishes, soups, stews, sauces, or anything you'd like! It works exceptionally well when making glazes such as teriyaki.
Also suitable for making jam. By using mirin, the final flavor will more elevated than jam made with sugar. You can use this mirin when making any type of jam. In addition, mirin is excellent in removing any unwanted odors from meat or seafood during cooking.
