If you're new to Japanese knives, then this Santoku by Enzo is one of the best introductory pieces.

This santoku Japanese knife is made from molybdenum vanadium stainless steel, which is a fantastic steel for beginner knife hobbyists, and serious home chefs. Molybdenum vanadium is very easy to sharpen and super corrosion-resistant. It combines the best features of stainless steel with the best features of carbon steel to create a blade that is easy to handle, easy to maintain, and exceptionally sharp.

The santoku knife style itself is a fantastic choice for everyone from seasoned chefs to beginner home cooks, as it's an all-rounder that can handle most kitchen tasks with ease. Its flat, sheepsfoot blade is great for chopping hard and large vegetables, as the blade can make complete contact with the cutting surface, resulting in a clean cut every time. It's good for chopping, mincing, dicing, and slicing and is recommended for fruits and vegetables, meat and fish. It's the most popular knife style among chefs in Japan for a reason.

Finally, the Enzo series was created to emphasize local production and craftsmanship, and to highlight the kitchenware industry of Niigata's Tsubame and Sanjo cities, which have been famous for creating high-quality and durable kitchenware for decades.

Gently hand wash after using, especially when cutting acidic foods. After washing, pat dry with a towel and allow to air-dry completely before storage. If blade begins to dull with time, sharpen on a whetstone to bring it back to out-of-the-box sharpness.
