Mentsuyu is a popular Japanese soup base used often to make soba and udon noodle dishes. This soup base from Yamaki is made with two types of bonito flakes for a balanced taste. Yamaki is one of Japan’s leading manufacturers of bonito flakes with more than 100 years of experience, having started the company in 1917.
The soup base is made from traditional Japanese cooking ingredients such as soy sauce, mirin, kombu (kelp), and sake in addition to bonito flakes. As well as a soup base for noodles, mentsuyu can also be used as a dipping sauce for cold noodle dishes or tempura. Expect a deep, savory, and umami flavor when used in your dishes.

How to use this Japanese condiment:
- As a dipping sauce for cold noodles (1:1): Add equal ratios of water and Tsuyu Soup Base together
- As a soup for hot noodles (1:3): Add 3 times more hot water than Tsuyu Soup Base
- As a dipping sauce for Tempura (1:2): Add 2 times more water than Tsuyu Soup Base
