Through repeated trial and error, this product is marketed after the miso paste has finished its 8-month-fermentation: Yamato believes fermenting the miso for 8 months is the best way to balance sweetness and robustness.
Unlike most conventional miso pastes, Yamato Miso is not heat-sterilized. As a result, it contains an abundance of living enzymes which bring various health benefits.
Another feature that makes this Japanese miso unique is that it does not contain sake spirit: this product is alcohol-free miso.
