This soy sauce is mildly sweetened with sugar, starch syrup, and mirin sweet sake. This apparent mismatch of saltiness and sweetness is actually harmonious.
Its viscous texture makes it suitable for making mitarashi-dango (skewered rice dumplings that are glazed with sweetened soy sauce).
Interestingly, this soy sauce also pairs well with sweet vegetables such as satsumaimo sweet potato and kabocha squash.
