Yamazaki Jyozo, a fermented food manufacturer based in Niigata Prefecture, has produced many types of miso paste and soy sauces that are kind to consumers with food allergies. Consumers with soybean allergies can enjoy this soy-free miso paste.
Rather than soybeans, which is one of the base ingredients of miso, this product is made with genmai brown rice. A combination of the sweetness from rice malt and umami from genmai gives this miso the equivalent flavor to conventional miso paste.
All ingredients of this product are harvested or processed in Japan, and the miso is free of additives.
